In a pinch, I’ve made it with salsa instead of Ro-tel. Use the mild or regular spicy – your choice. Don’t drain the can of tomatoes, just mix it all together. I make this about once a year, when we have a Super Bowl party. If you’re looking for a vegan nacho cheese or an easy real cheese nacho cheese dip, I have those too! But, sometimes, you just want a super tasty and easy to make appetizer. Ok, no, it isn’t the healthiest recipe in the world.
